Cooks and chefs from the beach area in Iztapa conclude the Seafood Cuisine Diploma

The Seafood Cuisine Diploma was held in the municipality of Iztapa, Escuintla (122 km South from Guatemala City,) aimed to chefs, cooks, restaurateurs, and hoteliers from the beach area. The course was given by Intecap in alliance with the Municipality and with scholarships granted by the Sugar Foundation -Fundazucar-.

The “Seafood Cuisine” Diploma was held to expand the gastronomic offer of hotels, restaurants, and dining rooms in the beach area as a tourist attraction and thus provide added value.

The 34 chefs and cooks from 1 hotel and 9 restaurants learned 18 innovative recipes based on seafood from artisanal fishing. They were also trained in good manufacturing and marketing practices for the finished product.

The “Seafood Cuisine” Diploma is part of the plan to support the reactivation of the economy in the beach area of the South of Guatemala. The Economic Development Strategy for Fishing and Gastronomic Tourism has expanded the gastronomic offer of hotels, restaurants, and dining rooms in the beach area of the municipalities of Iztapa and Sipacate, Escuintla; Chiquimulilla, Santa Rosa; and San Andres Villa Seca and Champerico, Retalhuleu.

If you visit the Las Lisas beach in Chiquimulilla, Santa Rosa, (160 km south from Guatemala City) you will find 30 chefs and cooks graduated from the Diploma in Gastronomic Diversification promoted by the Sugar Foundation – Fundazucar- in alliance with the Ministry of Economy and the local government.

This course, aimed at hotel and restaurant cooks and chefs, is part of the “Sustainable Strategy for Fishing and Tourism” which aims to promote economic reactivation in the beach areas of the shore of Guatemala.

The 30 chefs and cooks learned new recipes for dishes based on seafood from the region to be able to present innovative dishes to their customers and thus expand the gastronomic offer for tourists who visit the beach.

The graduates will continue their training the in 2022 at the Technical Institute for Training and Productivity -Intecap- with the diploma of “Cuisine of the Sea” with a scholarship granted by Fundazucar to continue innovating in new recipes.

The Gastronomic Diversification Diploma has been given in the towns of Escuintla, Santa Rosa and Retalhuleu and more than 200 chefs and cooks have graduated.

The Sugar Foundation – Fundazucar- in alliance with the Ministry of Economy and the local government of Champerico, Retalhuleu (226 km from Guatemala City) gave the Gastronomic Diversification diploma aimed at cooks and chefs from the different restaurants and hotels in that locality.

This diploma is part of the “Sustainable Strategy for Fishing and Tourism” which aims to promote economic reactivation in the beach areas of the South of Guatemala. In this case, 26 hotel and restaurant cooks and chefs completed training in new recipes for seafood-based dishes.

The graduates will continue their training the following year at the Technical Institute for Training and Productivity -Intecap- with the diploma of “Cuisine of the Sea” with a scholarship granted by Fundazucar to continue innovating in new recipes.

With this knowledge acquired, chefs and cooks will be able to present innovative dishes based on seafood from the region to their clients and thus expand the gastronomic offer for tourists visiting the town.

The Gastronomic Diversification Diploma has been given in the towns of Escuintla, Santa Rosa and Retalhuleu and more than 200 chefs and cooks have graduated.

The Guatemalan Sugar Industry, through its Sugar Foundation -Fundazucar-, supports the economic and tourist reactivation of the South of the country, therefore in alliance with the Ministry of Economy -Mineco- and the Municipality of Chiquimulilla, Santa Rosa, they carried out the diploma: Gastronomic Diversification.

28 chefs and cooks graduated from 13 hotels and restaurants in the beach town of El Chapeton, Chiquimulilla, located 154 kilometers (96 miles), southeast of Guatemala City, who learned innovative recipes based on seafood from the region to expand the gastronomic offer for tourists visiting the place.

The objective of the training program is to support economic reactivation by offering added value to tourists through the processing and transformation of products from artisanal fishing, as well as to acquire knowledge in good manufacturing practices, cold chain management and marketing of the finished product.

Chefs and cooks will continue their training at the Guatemalan Technical Institute for Training and Productivity -Intecap- with a scholarship for the Diploma “Seafood Cuisine” granted by the Sugar Foundation as part of the inter-institutional alliance, which promotes a strategy for the promotion local economic.

As part of the Economic Development Strategy for Fishing and Tourism of the Guatemalan Sugar Foundation, the Ministry of Economy, and the local government, was completed the Diploma in Gastronomic Diversification for chefs and cooks of restaurants and hotels in the beach towns of El Rosario and El Hawaii villages in the municipality of Chiquimulilla, Santa Rosa, located 140 kilometers (87 miles), south of the country.

The objective of the Diploma is to train chefs and cooks on the processing and transformation of products from artisanal fishing, knowledge of good manufacturing practices, management of the cold chain and marketing of the finished product.

The course lasted 20 theoretical and practical hours, where the 24 participants learned innovative recipes based on seafood and ended with a presentation of dishes and tastings of what was learned in the Diploma.

Participants will start a scholarship for the Diploma “Seafood Cuisine”, provided by the Sugar Foundation. This will be given by the Technical Institute for Training and Productivity -INTECAP- as an alliance with the institution, the Ministry of Economy, and the Municipality of Chiquimulilla.
